Ingredients:
1 cup kodiak mix
1/4 cup splenda
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 cup overnight growing oatmeal
1 egg
1/4 cup unsweetened almond milk
1/4 tsp vanilla extract
Directions:
Preheat oven to 350F. Prepare a cookie sheet by spraying it or lining it with parchment paper or a silicon mat.
In a medium bowl combine the kodiak mix, sugar, baking powder and cinnamon. Set aside.
In a large bowl, combine the 1/2 cup of leftover oatmeal, egg, almond milk and vanilla extract.
Add the wet ingredients to the dry and mix until combined.
Fold in any add ins and mix to combine.
Drop by 2 tablespoons full onto the cookie sheet. Leave some space as the cookies will spread.
Bake for 15 minutes.
You can add in 1/3 cup of fresh or frozen chopped fruit, raisins, chocolate chips, seeds or nuts. Remember to add in any extra points.
