Leftover Oatmeal Muffins/Donuts (1 point)

5 muffins or 6 donuts


Ingredients:

1/2 cup kodiak mix

3 tbsp splenda

1 tsp baking powder

1/4 tsp table salt

1 egg

2 tbsp almond milk

1/2 cup overnight growing oatmeal


Directions:

Preheat oven to 350F. Spray a muffin tin or donut pan.

In a large bowl, whisk together the flour, splenda, baking powder and salt. Set aside.

In another bowl, lightly beat the egg and milk. Add the oatmeal to the mixture and mix.

Pour the wet mixture into the dry mixture and stir briefly to combine.

Divide the batter up evenly between the 5 muffin cups or 6 donut molds.

Bake for 25-30 minutes for the muffins and 15-20 minutes for the donuts or until a toothpick inserted into the center comes out clean.
