Ingredients:
1 1/2 cups kodiak mix
1 tsp baking powder
1/2 tsp baking soda
1/4 cup splenda
2 eggs
1/2 cup unsweetened applesauce
1/2 cup unsweetened almond milk
1/3 cup plain fat free greek yogurt
1/4 cup fresh lemon juice
1 tbsp lemon zest
1/2 tsp vanilla
Directions:
Preheat oven to 350F. Prepare a muffin tin by spraying or putting in baking cups. Set aside.
In a medium bowl, combine the kodiak mix, baking powder, baking soda and sweetener. Set aside.
In a large bowl, whisk together the eggs, applesauce, almond milk, yogurt, lemon juice, lemon zest and vanilla.
Add the dry ingredients to the wet ingredients and mix just until combined.
Divide the batter evenly (3 tbsp) into the prepared muffin tin.
Bake for 18-20 minutes or until an inserted toothpick comes out clean.
Variations:
Lemon Blueberry - fold in 1 cup of fresh or frozen blueberries at the end before cooking.
Lemon Poppyseed - add in 2 tbsp of poppyseeds.
