Mango Salsa (0 points)

4 servings (1/4 cup each) Ingredients: 1 cup fresh or thawed from frozen mango, diced 1/4 cup red onion, diced 1/4 cup bell pepper, diced 1 tbsp cilantro paste 1-2 fresh limes, juice 1/4 tsp red pepper flakes Salt and pepper to taste Directions: In a medium bowl, combine the mango, onion and bell pepper. Set aside. In a smaller bowl, mix up the dressing by adding; the lime juice, cilantro paste, red pepper flakes, salt and pepper. Pour the dressing over mango mix. Stir the ingredients together and let the salsa rest for 10 minutes or longer before serving. Store leftovers in a covered container in the refrigerator. Suggested Serving: Serve over fish, on fish tacos, black bean tacos or with homemade tortilla chips.
