Marinated Coleslaw (1 point)

4 servings (1/2 cup each)


Ingredients:

1/3 cup apple cider vinegar

1/2 tsp prepared mustard

1/2 tsp celery seed

1/2 tsp table salt

1/4 tsp black pepper

1 tbsp olive oil

14 oz package coleslaw mix

2 oz uncooked celery, thinly sliced

0.5 oz uncooked red onion, thinly sliced


Directions:

Add the vinegar, mustard, celery seed, salt/pepper and olive oil to a small container with a lid. Shake vigorously. Set aside.

Add the vegetables together in a medium bowl and mix until combined.

Add the dressing to the vegetables. Mix thoroughly, cover and set in the fridge for at least a couple of hours (better the longer it sits).

Mix before serving.


Suggested Serving: Excellent side dish and great on fish tacos.
