Marinated Green Beans (4 points)

2 servings (8 oz each)


Ingredients:

16 oz uncooked green beans

5 tsp olive oil

5 tsp red wine vinegar

1 tsp minced garlic

1 tsp mustard

1 tsp italian seasoning

1 tsp table salt

1/4 tsp black pepper

1 oz uncooked red onion, thinly sliced


Directions:

Place the green beans in a large pot. Cover the green beans with water. Place on the stove over high heat, and bring to a boil. Once at a boil, lower the heat to medium and simmer for 5 minutes. Strain and set aside.

In a medium bowl whisk together the olive oil, vinegar, garlic, mustard, italian seasoning, salt and pepper.

Add the warm green beans and onion, toss to coat. Cover and refrigerate for 4 hours or longer.


Suggested Serving: Serve as a side dish with cold meats, veggies and cheese.
