Marinated Vegetable Salad (0 personal points)

3 servings (1 cup each)


Ingredients:

1/2 cup uncooked broccoli, chopped

1/2 cup uncooked cauliflower, chopped

1/2 cup uncooked carrots, chopped

1/2 cup cucumber, chopped

1 cup red seedless grapes, halved

1 tsp minced garlic

1 tbsp red wine vinegar

1 tbsp apple cider vinegar

1 tbsp dijon mustard

1 tbsp no added sugar pancake syrup

1 lemon, juice only


Directions:

Add the cut vegetables and grapes to a medium bowl. Set aside.

In a small bowl combine the rest of the ingredients and whisk to mix.

Pour over the vegetables and grapes. Mix completely and transfer to a covered container in the fridge for at least an hour or two.
