Ingredients:
1/2 cup flour
1 tsp baking powder
1 pinch table salt
1/2 cup plain fat free greek yogurt
5 tbsp e.d.smith lemon spread
Directions:
Preheat oven to 375F. Prepare a baking sheet by spraying or lining with parchment paper or a silicon mat. Set aside.
Mix up the dough using the flour, baking powder, salt and greek yogurt. Knead a few times.
Roll out dough to a 10" wide by 6" high rectangle.
Spread the lemon curd on the surface of the rolled out dough, leaving a 1/2" border all around.
On the 10" long border, start rolling the dough tightly until you have rolled all the dough.
Cut the dough into 10, 1" pieces. Place each piece on the prepared baking sheet.
Bake for 15-20 minutes until golden brown and cooked through.
Suggested Seving: Serve with cream cheese yogurt frosting/dip.
