Morning Glory Mini Muffins

12 servings (2 each)


Ingredients:

1 1/4 cups kodiak pancake mix

1 cup quick oats

1/2 cup date powder

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp table salt

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 cup reduced sugar craisins

1/2 cup walnut pieces

1/2 cup carrot, grated

1/2 cup apple, grated

2 bananas, ripe

2 eggs

1/4 cup olive oil

1/3 cup unsweetened almond milk

 1 tsp vanilla extract


Directions:

Preheat the oven to 350F. Prepare a mini muffin tin by lightly spraying or lining with parchment paper liners. Set aside.

In a large bowl, Combine the kodiak, oats, date powder, baking powder, baking soda, salt, cinnamon and nutmeg.

Stir in the craisins, walnuts, grated carrot and apple. Set aside.

In a blender, add the bananas, eggs, oil, milk and vanilla. Blend and add the contents into the large bowl and combine until just mixed.

Divide the batter, evenly, into the prepared pan (about 2 tbsp each).

Bake for 15-20 minutes until golden brown and cooked through.
