Oatmeal Chocolate Chip Bars (2 points)

Ingredients:

1 cup old fashioned rolled oats

1/4 cup kodiak mix

1/2 tsp ground cinnamon

1/4 tsp baking powder

1/4 tsp salt

1/2 cup powdered peanut butter + 1/4 cup water

2 eggs

2 tbsp unsweetened applesauce

4 tsp no sugar added pancake syrup

1/2 tsp vanilla extract

1/4 cup pumpkin seeds

1/4 cup lily's chocolate chips


Directions:

Preheat oven to 350F. Spray or line an 8"x 8" pan with parchment paper. Set aside.

In a medium bowl combine the oats, kodiak mix, cinnamon, baking powder and salt. Set aside.

In another bowl mix up the peanut powder with the water to make peanut butter. Add the eggs, applesauce, syrup and vanilla extract. Mix until smooth.

Add the dry ingredients to the wet and mix until combined. Fold in the chocolate chips and the pumpkin seeds.

Pour the batter into the prepared pan, smooth and bake for 25-30 minutes.
