Oatmeal Crust Pizza (2 personal points)

4 servings


Ingredients:

1 cup uncooked rolled oats

2 large eggs

1 cup unsweetened almond milk

1 tsp italian seasoning

1/2 tsp italian seasoning

1/2 cup canned tomato sauce

3 slices of cappola ham, chopped

Uncooked red onion, 4 thin slices

1/2 cup pineapple

5 tsp real bacon bits

75 gm saputo light mozarella


Directions:

Preheat oven to 400F.

In a large bowl combine the oats, eggs, milk and italian seasoning. Mix and let sit for 10 minutes.

Heat up a 10" lightly sprayed skillet on medium. Pour the oatmeal mixture into the skillet and cover.

Cook until mixture is set, about 10 minutes. Flip and cook on the other side another 5-7 minutes.

Flip out onto a baking sheet. Top with your favourite toppings and then sprinkle with light mozarella cheese.

Pop in the oven and cook until cheese is melted and bubbly. If you wish, turn the oven to broil and brown the cheese for a few minutes under the broiler.
