Ingredients:
1/3 cup oats
1/2 tsp baking powder
1 pinch table salt
2 tbsp unsweetened applesauce
1 egg
Directions:
Add the oats, baking powder, salt, egg and applesauce to a small bowl. Mix to form a batter.
Pour into a sprayed 2 cup ramekin.
Microwave for 2 minutes on high.
Wait until completely cooled, slice in half and toast.
These can also be baked in an oven safe ramekin at 350F for 12-15 minutes.
Variations:
You can add about 1/8-1/2 tsp any spices you may like as well such as ground cinnamon, everything bagel, caraway seed or rosemary.
Pumpkin Spice - Substitute 2 tbsp of pumpkin puree instead of applesauce + 1/8 tsp pumpkin pie spice.
Banana - Substitute 2 tbsp mashed banana instead of applesauce + 1/8 tsp cinnamon.
Blueberry - Add 2 tbsp fresh or frozen blueberries + 1/8 tsp cinnamon.
Just made these this morning, added my bagel mixture, they are great! Quadrupled the recipe, and baked in the oven. Terrific!
They are a favourite of mine!
Made 2 of these today, really enjoyed them with my poached eggs!! Very easy to make!!
