Oatmeal Pie Crust (1 point)

Ingredients:

1/2 cup quick oats

1/2 cup kodiak mix

1/4 tsp baking soda

1/4 tsp table salt

6 tbsp splenda

1/4 cup unsweetened applesauce

1/4 tsp vanilla extract


Directions:

Preheat oven to 375F.

Blend oats until broken down.

Add the other dry ingredients and pulse a few times to mix, then transfer to a medium bowl.

Add the applesauce and vanilla to the dry ingredients and mix well.

Spread each crust mixture, using wet fingers, by starting in the middle and working your way up the sides.

Prick the crust with a fork. Bake.

Cool completely before adding filling.


Suggested Bake Times:

1 - 9" pie crust = 8 to 10 minutes

2 - 5" pie crusts = 6 to 8 minutes

8 - muffin tin cookie cups = 4 to 6 minutes

Kodiak mix is a high protein pancake and waffle mix. You could substitute with another high protein pancake mix or you could even use flour but you may have to adjust your points 😊

Instead of kodiak can you use flourish buttermilk pancake mix?
