Oatmeal Protein Biscuits (2 points)

Ingredients:

2 1/4 cups quick or rolled oats

14 oz fat free cottage cheese

3 eggs

1/2 tsp table salt.


Directions:

Preheat oven to 350F. Spray, line with parchment paper or silicon mat a baking sheet.

Add the cottage cheese and egg to a blender and blend until the curds are broken down. Pour into a medium bowl.

Add the oatmeal and salt to the mixture. Mix until combined.

Form into 8 equal mounds on baking tray. Shape into biscuit.

Bake for 30-35 minutes until golden brown and cooked through.


Suggested Serving: You can add in a little sweetener, cinnamon and berries for a sweet biscuit or garlic and herbs for a savoury biscuit.
