Ingredients:
3/4 cups kodiak mix
3 tbsp splenda
1 tsp baking powder
1/4 tsp table salt
1/4 tsp ground cinnamon
1 egg
1/4 cup plain fat free greek yogurt
1/4 cup almond milk
1 tsp vanilla extract
1 tbsp orange zest
1 tbsp fresh orange juice
1/3 cup cranberry sauce (see recipe)
Directions:
Preheat oven to 350F. Prepare 5 muffin cups by spraying lightly with oil or lining with parchment cup liners.
Whisk kodiak mix, splenda, baking powder, salt and cinnamon together in a bowl. Set aside.
In another bowl combine the egg, yogurt, milk, vanilla extract, orange zest and juice.
Add the dry ingredients to the wet and mix until just combined. Swirl in the cranberry sauce.
Divide batter up into 5 prepared muffin cups.
Bake for 25-30 minutes. Cool completely.
