Peanut Buster Parfait (2 points)

4 servings


Ingredients:

1 pkg fat free sugar free chocolate pudding mix

1 1 /2 cups cold almond milk

1/2 cup plain fat free greek yogurt

2 tbsp flavoured peanut powder


Directions:

Make up the pudding by adding 1 1/2 cups of cold almond milk to the contents of a package of chocolate pudding. Mix well and refrigerate until it sets.

Mix the yogurt with the powdered peanut butter. Refrigerate until pudding is set.

Divide the pudding and peanut butter yogurt into 4, 1/2 cup ramekins or jars. Alternate layers of approximately 1-2 tbsp each; pudding, yogurt, pudding, yogurt and lastly pudding.

Refrigerate until ready to eat.


If you use the unsweetened peanut powder, add 1-2 tsp of your preferred sweetener to the yogurt as well as well.


Suggested Serving: Serve with cool whip, chocolate sauce, a few chopped peanuts and/or sugar free chocolate chips.

This is very good!! I did double the Greek yogurt mixture the second time I made it to up the peanut flavour 😋
