Pesto Chicken Bake (2 personal points)

4 servings


Ingredients:

4 chicken breasts

4 tsp basil pesto

8 slices shaved ham

63 gm light mozzarella cheese

8 tomato slices, thin


Directions:

Preheat oven to 400F. Prepare a baking sheet by lining it with foil and lightly spraying it with oil. Set aside.

Place the chicken breasts between parchment paper and pound the uncooked chicken until they are thinner.

Place the breasts on the prepared baking sheets and spread 1 tsp of basil pesto on each breast.

Bake for 20 minutes or until each breast is no longer pink.

Remove from oven, divide and top each breast with; shaved ham, mozzarella and sliced tomatoes.

Bake for an additional 5-10 minutes or until the cheese is melted.
