Pork Carnitas Egg Bake (2 personal points)

4 servings (1/4 pan)


Ingredients:

4 large eggs

1/3 cup unsweetened almond milk

12 oz cooked pork carnitas

1, 4 oz can green chilies

2 medium green onions, sliced

1/2 tsp garlic powder

1/2 tsp table salt

1/2 tsp black pepper


Directions:

Preheat oven to 350F. Prepare an 8" x 8" square baking pan by lightly spraying it with oil.

Combine eggs and milk. Add the rest of the ingredients.

Pour into the prepared pan. Bake for 40-45 minutes.

Remove from the oven, allow it to cool for a few minutes before cutting and serving.


Suggested Serving: Serve with light shredded cheese, salsa, plain fat free greek yogurt and additional sliced green onions.
