Pumpkin Banana Panna Cottas (3 points)

Ingredients:

1 tbsp unflavoured gelatin

1/3 cup hot water

16 oz banana, ripe

12 oz low fat evaporated milk

1 cup pumpkin puree

1 tsp pumpkin pie spice

1 tsp vanilla extract


Directions:

Set out a measuring cup. Add the hot water and gelatin. Stir well and allow the mixture to rest for 5 minutes.

Meanwhile, peel the bananas and cut into large chunks. Place the banana chunks into the blender. Blend until smooth.

Add the evaporated milk, pumpkin puree, pumpkin pie spice and vanilla to the blender. Blend until mixed and then add the gelatin mixture into the blender. Blend again until smooth.

Pour the mixture into 4, 16 oz mason jars. Cover and chill for 3-4 hours to set.


Suggested Serving: Serve with additional fruit and whipped cream.
