Ingredients:
1 1/4 cups quick oats
1 tsp pumpkin pie spice
1/4 tsp table salt
1/2 cup pumpkin puree
1 medium banana, ripe
1 large egg
1 tsp vanilla extract
1/4 cup reduced sugar craisins
1/4 cup pumpkin seeds
Directions:
Preheat the oven to 350F. Prepare a small cookie sheet by lining it with parchment paper. Set aside.
To a medium bowl, add the oats, pumpkin pie spice and salt. Mix and set aside.
Blend together a banana, pumpkin puree, egg and vanilla. Add to the oat mixture.
Fold in the craisins and pumpkin seeds.
Divide the batter, evenly, into 6 mounds. Press slightly to flatten.
Bake for 20 minutes or until cookies are cooked through.
