Ingredients:
4 eggs
1 cup unsweetened almond milk
1/4 cup pumpkin puree
2 tbsp splenda
1 tsp pumpkin pie spice
1/2 tsp vanilla extract
1 pinch table salt
5 slices low point bread
Directions:
Preheat oven to 350F. Prepare an 8"x 8" square pan by lightly spraying it with oil. Set aside.
In a large bowl, add the eggs, milk, pumpkin, splenda, pumpkin pie spice, vanilla and salt. Mix well. Set aside.
Slice bread into 1" cubes. Leave the crusts on. Layer the bread cubes in the prepared pan.
Pour the egg mixture evenly over the bread cubes.
Bake the casserole for 40-45 minutes. Remove from oven and let set for about 10 minutes before serving.
I added banana slices, drizzled o point chocolate syrup and 1 point low fat cool whip on mine. Delicious!!
