Pumpkin French Toast Bake (2 points)

Ingredients:

4 eggs

1 cup unsweetened almond milk

1/4 cup pumpkin puree

5 tsp date powder

1 tsp pumpkin pie spice

1/2 tsp vanilla extract

1 pinch table salt

5 slices low point bread


Directions:

Preheat oven to 350F. Prepare a 9"pie plate by lightly spraying it with oil. Set aside.

In a large bowl, add the eggs, milk, pumpkin, date powder, pumpkin pie spice, vanilla and salt. Mix well. Set aside.

Layer the bread cubes in the prepared pan. Pour the egg mixture evenly over the bread cubes.

Bake the casserole for 40 minutes. Remove from oven and let set for about 10 minutes before serving.


Serve with fruit and maple syrup.

I added banana slices, drizzled o point chocolate syrup and 1 point low fat cool whip on mine. Delicious!!
