Pumpkin Mousse (0 personal points)

4 servings (1/2 cup each)


Ingredients:

1 cup fat free cottage cheese

1/2 cup pumpkin puree

3 tbsp no sugar added pancake syrup, or sweetener of choice

1 tsp pumpkin pie spice

1/8 tsp vanilla extract


Directions:

Add all the ingredients to a blender and blend until the cottage cheese is broken down.

Divide into 4 small ramekins or glass jars (about 1/2 cup each).

Store in the refrigerator.


Suggested Serving: Serve with fat free cool whip.
