Quick Braised Red Cabbage (1 point)

6 servings (1/2 cup each)


Ingredients:

1/2 large onion, sliced

1/2 large apple, diced

1 jar red cabbage (Paulsen)

2 tbsp balsamic vinegar

1 bay leaf


Directions:

Sauté onions, in a lightly sprayed large skillet, until golden brown.

Add in diced apple, red cabbage, vinegar and a bay leaf.

Bring to a boil and let simmer for 20 minutes.
