Ricotta Banana Oatmeal Waffles/Pancakes (3 points)

2 servings (1/2 a large waffle, 2 mini waffles or pancakes)


Ingredients:

54 g uncooked oatmeal

1 tsp baking powder

1/4 tsp table salt

2 oz almond milk

2 oz light ricotta cheese

2 oz banana, ripe

1 egg

1 tsp ground cinnamon

1 tsp vanilla extract


Directions:

Add all the ingredients into a blender and blend until the oats are broken down.

Spray a large or mini waffle iron, griddle or skillet with cooking oil.

Spoon 1/2 cup of batter to the large waffle iron or 2 tbsp of batter to the mini waffle iron, griddle or skillet.

Repeat with remaining batter.

Cook 2-3 minutes per side or until golden brown.


Suggested Serving: Serve with yogurt, fruit and/or nuts.
