Salted Caramel Cottage Cheese Ice Cream (3 points)

6 servings (1/3 cup)


Ingredients:

16 oz fat free cottage cheese

8 oz banana

5 tsp yupik date powder

1 tsp vanilla extract

1 pinch table salt

65 g deglet noor dates, chopped

1.5 oz no sugar added chocolate, chopped


Directions:

Add the cottage cheese, banana, date powder, vanilla and salt to a food processor or blender. Blend until smooth.

Add in the dates and chocolate. Pulse. You want them to be broken up but not fully blended.

Add to a loaf pan and freeze for 3-4 hours until the ice cream is set.


If you are using a ninja creami, combine the cottage cheese, banana, date powder, vanilla and salt. Mix and add to the creami pints. Freeze for 24 hrs. Pull out to thaw, about 10 minutes, then spin on the lite ice cream setting. Re-spin until creamy. Mix-in the chopped dates and chocolate.
