Smoked Sausage Sheet Pan Dinner (4 points)

4 servings (1/4 mixture)


296g little potatoes, halved

1 1/4 cups broccoli, florets

2 medium carrots, sliced

1/2 cup red bell pepper

1/2 cup onion, chopped

2 tsp minced garlic

1 tbsp olive oil

1 tbsp italian seasoning

1/2 tsp table salt

1/2 tsp black pepper

300g smoked turkey sausage, cut into rounds


Directions:

Preheat the oven to 400F. Prepare a large baking sheet by lightly spraying it with oil. Set aside.

Parboil or microwave the veggies to soften them up a little.

Add the olive oil and spices and toss them to mix. Set aside.

Slice the sausage into 1" rounds. Sprinkle on thr prepared baking sheet. Set aside.

Add the veggie mixture to the prepared baking sheet and bake everything for 20 minutes, flipping half way through.
