Ingredients:
1 pound ground chicken breast
1 egg
3 tbsp bread crumbs
1/2 cup fat free salsa, divided
3 tbsp sugar free bbq sauce
1/2 tsp table salt
1/2 tsp black pepper
1/2 tsp celery salt
1 tsp onion powder
1/2 cup crushed tomatoes
1 tsp splenda
1 tsp sriracha hot sauce
1/2 tsp balsamic vinegar
145 gm (1 1/4 cup) shredded light mozzarella cheese
Directions:
Preheat oven to 375F.
Combine the ground chicken, egg, bread crumbs, 1/4 cup salsa, bbq sauce, salt, pepper, celery salt and onion powder. Mix until well combined.
Transfer to a sprayed pizza pan and spread out, with wet hands, to the edges. Bake in the preheated oven for 15 minutes.
While the crust is baking, make the sweet and spicy tomato sauce by adding 1/4 salsa, the canned crushed tomatoes, splenda, sriracha and balsamic vinegar to a small saucepan. Cook over medium high heat and bring to a boil. Let boil for 5 minutes, stirring frequently, until it has thickened.
Pull the crust out of the oven and dress with the sauce, then the toppings.
Finish off with the shredded cheese. Return to the oven and bake for an additional 10 minutes. Turn the oven to broil in order to brown the cheese. Watch carefully so as to not burn.
Suggested Serving: Serve with salsa, yogurt, green onions, tomatoes and a squeeze of lime.
