Spelt Biscuits (2 points)

4 servings (1 each)


Ingredients:

1 cup spelt flour

2 tsp baking powder

3/4 tsp table salt

1/4 cup unsweetened applesauce

3-4 tbsp unsweetened almond milk


Directions:

Preheat oven to 375F. Prepare a baking sheet by lightly spraying with oil or lining with parchment paper. Set aside.

In a medium bowl, sift together the flour, baking powder and salt.

Add the applesauce and cut in, with a pastry blender or fork, until it is like coarse meal.

Add enough milk until dough is slightly sticky. Start with 3 tbsp.

Gather up the dough into a ball, sprinkle with flour and roll out on a floured board.

Cut into 4 even rounds, about 2 1/2 to 3" in diameter.

Place on prepared pan and bake for 20-25 minutes, until browned on top.
