Spinach Artichoke Chicken (4 points)

2 servings (1 chicken breast each)


Ingredients:

2 uncooked chicken breasts

2 tbsp 0% plain siggi's yogurt

2 tbsp light cream cheese

2 tbsp light parmesan cheese

40g light shredded mozzarella, divided

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 cup canned artichokes (without oil), chopped

4 oz chopped frozen spinach, thawed


Directions:

Preheat the oven to 375F. Prepare a baking dish by lightly spraying it with oil.

Lay the chicken breasts flat in the dish. Set aside.

Mix the yogurt, cream cheese, parmesan cheese, 1/2 the mozzarella cheese, garlic and onion powders.

Fold in the chopped artichokes and spinach.

Divide and spread the mixture on each chicken breast.

Sprinkle the remainder of the mozzarella on the chicken breasts.

Bake for 30-40 minutes or until the chicken is cooked through.
