Sweet Potato and Egg Skillet (1 point)

4 servings (1 egg + 1/4 potato mixture)


Ingredients:

2 medium sweet potatoes shredded

1 tsp minced garlic

1/8 tsp dried thyme

2 cups baby spinach

4 large eggs


Directions:

In a large sprayed skillet, over low heat, add the sweet potato, garlic and thyme.

Cook uncovered until potatoes are almost tender, 4-5 mi utes stirring occasionally.

Stir in spinach just until wilted, 2-3 minutes.

Make 4 wells in the potato mixture and break an egg into each well.

Cover and cook until the egg whites are set, about 5-7 minutes.


Suggested Serving: Ideal side dish for breakfast, lunch or dinner.
