Taco Soup (3 points)

4 servings (1 1/2 cups each)


Ingredients:

8 oz lean ground beef

1/2 cup uncooked onions, diced

1/2 cup uncooked red pepper, diced

8 oz zucchini, quartered and sliced

14 oz can black beans, drained and rinsed

1 cup frozen corn

14 oz canned diced tomatoes

2 tsp garlic, minced

3 cups beef broth

2 tbsp taco seasoning


Directions:

Prepare a large soup pot by lightly spraying with oil. Add lean ground beef and saute, breaking it up as it's cooked.

Add the rest of the ingredients.

Turn heat to low and cook for 15-20 minutes. Serve hot.


Suggested Serving: Serve with shredded cheese, sour cream and sliced green onions.
