Tasty Chicken and Mushrooms (0 points)
2 servings (1/2 mixture each)
Ingredients:
1 tsp minced garlic
8 oz chicken breast, cut into strips
3/4 cup fat free beef broth
1 tbsp tomato paste
2 cups sliced mushrooms
1 tsp dried thyme
Directions:
In a lightly sprayed large skillet, saute the garlic until tender.
Add chicken; cook until no longer pink and cooked through. Remove and keep warm.
Add the broth, tomato paste, mushrooms and thyme to the skillet. Cook for another 10-15 minutes or until the mushrooms are tender and the sauce has reduced and slightly thickened.
Return the cooked chicken to the pan and heat through.
