Tomato and Cucumber Salad (2 points)

2 servings (1/2 salad each)


Ingredients:

5 oz tomato, chopped

5 oz english cucumber, chopped

2 oz red onion, sliced

1 tbsp olive oil

1 tbsp red wine vinegar

1 tsp minced garlic

1/2 tsp dried oregano

1/2 tsp dried cilantro


Directions:

In a medium bowl, combine the tomatoes, cucumber and red onion. Toss to combine and set aside.

Prepare the dressing by combining the olive oil, vinegar, garlic, oregano and cilantro. Whisk well.

Pour the dressing over the veggies and toss gently. Let sit at room temperature for 1/2-1 hour.


Suggested Serving: Serve with crumbled feta as a side dish or on it's own.
