Tomato and Feta Quiche (1 personal point)

Ingredients:

6 eggs

3 scallions, thinly sliced

1/4 cup red onion, thinly sliced

1 cup fresh tomatoes, chopped

85 gm ( 3/4 cup) light feta cheese, crumbled

1 tsp italian seasoning


Directions:

Preheat oven to 350F. Lightly spray a 9" glass pie plate. Set aside.

In a sprayed large skillet, over medium high heat, saute both types of onions until soft and caramelized.

Spread the cooked onions over the bottom of the pie plate.

Whisk the eggs up and pour over the cooked onions.

Spread the chopped tomatoes and crumbled feta cheese on top of the eggs.

Sprinkle the top with italian seasoning.

Bake for 30-35 minutes, then broil for a minute or so to brown, making sure to watch closely so it doesn't burn.
