Ingredients:
1 lb ground turkey breast
1/3 cup uncooked onion, diced
1 tsp minced garlic
2 tbsp chili powder
2 tsp ground cumin
1 tsp table salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
15 oz can crushed tomatoes
1 small head cauliflower, cut into 1" pieces
15 oz pinto beans, drained and rinsed
4 slices light cheddar slices
Directions:
Preheat the oven to 350F. Spray an 8" x 8" square pan. Set aside.
Heat up a large saucepan on medium high heat, lightly spray with oil, and add the ground turkey breast.
Cook until mostly cooked through, breaking up clumps with a wooden spoon.
Add the onions, garlic, chili powder, cumin, salt, pepper and cayenne. Cook until fragrant, one more minute. Stir in the tomatoes.Reduce the heat to low and add in the cauliflower and beans. Simmer for 15 minutes.
Pour mixture into your prepared pan. Smooth top. Place the cheese slices on top. Cook for 30 minutes until cheese is melted and casserole is warmed through.
Suggested Serving: Serve with your favourite chili toppings; greek yogurt, salsa, green onions and a squeeze of lime.
