Ingredients:
3 1/2 turkey chorizo sausages, casings removed
1/2 cup onion, chopped
1/4 cup green pepper, chopped
1/4 cup red pepper, chopped
2 tsp minced garlic
2 cans whole mushrooms, drained
1 19 oz can tomato sauce
1 tbsp italian seasoning
Directions:
Heat a lightly sprayed large skillet on medium high heat and add the turkey sausage.
Cook, breaking up the sausage meat, until browned and no longer pink.
Add meat to a large saucepan. Set aside.
Add the onion and peppers to the frying pan and saute on medium high until veggies start to soften, about 5 minutes.
Add the garlic and cook for another minute.
Add the veggies to the pot. Add in the rest of the ingredients and heat until bubbling. Reduce the heat to medium low and simmer for 30 minutes.
Suggested Serving: Serve over spaghetti squash, veggie noodles, palmini noodles or pasta.
