Ingredients:
1 pound cooked ground turkey breast, see turkey "chorizo" sausage recipe
4 cups cooked spaghetti squash
1 cup salsa
3/4 cup light shredded cheese
Directions:
Preheat oven to 375F. Spray 6 large (2 cup) oven proof ramekins. Set aside.
Add the cooked squash, cooked "chorizo" turkey sausage, salsa and cheese to a large bowl and mix together.
Divide the mixture (around 3/4 cup) between 6 sprayed oven proof proof bowls or ramekins.
Press dents into each mixture and crack an egg carefully into each depression.
Bake for about 30-40 minutes (longer if you want your whites cooked and the yolks firm).
Remove from the oven and cool slightly before serving.
Suggested Serving: I make 6 of these up and leave them in the fridge without adding the egg. I add the egg just before baking. Because they were in the fridge and I prefer all my egg white cooked I end up baking mine for 40 minutes.
