Turkey Noodle Alfredo Casserole (2 points)

3 servings


Ingredients:

8 oz cooked turkey breast, cubed

10 oz uncooked kohlrabi noodles

1 pkg alfredo sauce mix

3/4 cup almond milk

2 broghies, blended


Directions:

Preheat oven to 375F.

Make the alfredo sauce according to the package directions using almond milk and omitting the butter. Set aside.

Spray 3, 2 cup ramekins. Divide the turkey and noodles evenly among the ramekins.

Divide and ladle an equal amount of alfredo sauce to all 3 ramekins.

Sprinkle the top with the broghie crumbs. Spray lightly with oil spray.

Bake for 25-30 minutes until the casseroles are bubbling and browned.


Suggested Serving: You could substitute the kohlrabi noodles with other veggie noodles; hearts of palm, zucchini, butternut or spaghetti squash.
