8 servings (1 1/2 cups each)
Ingredients:
1 cup uncooked onion, chopped
1 cup uncooked carrots, chopped
1 cup uncooked celery, chopped
3 tsp minced garlic
8 cups turkey stock
2 bay leaves
1 tsp poultry seasoning
1 tsp dried rosemary, crushed
1 tsp dried thyme
1 tsp dried parsley
1/2 tsp black pepper
2 cups cooked turkey breast, chopped
Directions:
Spray a large stockpot and add onion, carrots, celery and garlic. Heat on medium high heat until vegetables are tender, 5 minutes.
Add the stock and spices.
Raise the heat to high and bring to a boil.
Lower the heat and simmer, uncovered, for 20 minutes, stirring occasionally.
Stir in the cooked turkey. Simmer for another 5 minutes.
Discard the bay leaves.
