Ingredients:
1 14oz can diced tomatoes, drained
4 turkey sausages, skins removed
3 tbsp green chilies, drained
2 tbsp fresh parsley, finely chopped
17 g dried apricot, finely chopped
1 tbsp almond milk
1 tsp minced garlic
1/2 tsp smoked paprika
1/2 tsp chili pepper flaked
1 pinch onion powder
1/4 tsp table salt
1/4 tsp black pepper
1 tsp fresh lemon juice
Directions:
Place tomatoes, ground sausage meat and green chilies in a sprayed skillet on medium heat for a few minutes until mixed together.
Add in milk, the rest of your spices, diced apricots and chopped parsley. Cook for 20 minutes or until meat is cooked thoroughly cooked through.
Add your lemon juice and mix again.
Suggested Serving: Serve with soft or hard boiled egg, herb yogurt (1 cup plain fat free greek yogurt + 1 tsp minced garlic + 1 tbsp chopped fresh parsley + 1 tbsp chopped fresh dill), bacon crumbles, cucumber, fresh tomatoes, spinach and extra parsley.
