Tuscan Penne

4 servings (1/2 cup each)
Ingredients:
100g dry penne pasta
1/4 large red onion, diced
1 tsp garlic, minced
65g no oil sun-dried tomatoes, diced
2 cups spinach, chopped
1/2 cup fat free chicken broth
1 tsp italian seasoning
1 tsp paprika
1/2 tsp onion powder
100g light cream cheese
2 tbsp tomato paste
30g parmesan cheese, shredded
Directions:
Cook the pasta and set aside.
In a large lightly sprayed skillet, on medium high heat, add the onion, garlic and sun-dried tomatoes. Cook until onion starts to appear translucent. Add the chopped spinach and continue to cook until the spinach wilts.
Add the chicken broth, the spices as well as the penne and allow to heat up.
Stir in the cream cheese and tomato paste. Heat through.
Sprinkle on the shredded parmesan.
