Tzatziki Chicken Salad (2 points)

4 servings (1/4 mixture each)


Ingredients:

1 can kirkland chicken breast, drained and smashed

1/3 cup plain 0% siggi's yogurt

2 tsp fresh lemon juice

1 tsp minced garlic

1/3 cup cucumber, chopped

6 small cherry tomatoes, chopped

1 medium scallion, sliced

70g light feta cheese, crumbled

8 kalamata olives, chopped

1 tsp dried dill

1 tsp dried parsley


Directions:

In a medium bowl, combine all the ingredients together.

Chill at least 30 minutes before serving.


Suggested Serving: Serve on crackers, pitas or on top of a salad.
