Ingredients:
4 large eggs
1/4 cup fat free cottage cheese
2 tbsp uncooked broccoli, diced
2 tbsp uncooked carrot, diced
2 tbsp red bell pepper, diced
1 medium green onion, thinly sliced
21g light tex mex cheese
Direction:
Preheat the oven to 350F. Prepare 2, 1 cup dishes by lightly spraying them with oil. Set aside.
To a medium bowl, add all the ingredients except the cheese. Whisk together and divide evenly between the 2 prepared dishes.
Divide, evenly, the cheese between the 2 dishes. Bake for 25-30 minutes or until eggs are cooked through.
Suggested Serving: Serve with a side of fruit.
