Zucchini and Red Onion Salad (2 points)

3 servings (1/3 mixture)


Ingredients:

1/4 cup white or red wine vinegar

1 1/2 tbsp olive oil

1/2 tbsp italian seasoning

1 tsp minced garlic

1/2 tsp table salt

1/4 tsp black pepper

1 pinch red pepper flakes

12 oz zucchini, thinly sliced half moons

1/2 small red onion, thinly sliced


Directions:

In a medium bowl, whisk together the vinegar, olive oil, italian seasoning, garlic, salt, pepper and red pepper flakes.

Add the zucchini and red onion. Toss to combine. Let marinate 20-30 minutes, or up to an hour at room temperature.


Suggested Serving: Excellent on salads, in bowls or as a side dish.
