Ingredients:
2 medium bananas, ripe and chopped
1/2 cup unsweetened applesauce
1/2 cup plain fat free greek yogurt
1 tsp vanilla extract
2 eggs
1 cup kodiak mix
1/2 cup powdered peanut butter
5 tbsp swerve brown sugar
1 tsp baking powder
1 tsp baking soda
1 large apple, peeled, cored and diced
Instructions:
Preheat oven to 350F.
Mix bananas with a mixer until they are mashed.
Add the applesauce, vanilla, yogurt and eggs. Mix together. Set aside.
In another bowl, add the kodiak mix, powdered peanut butter, brown sugar, baking powder and baking soda. Mix well.
Add the dry ingredients to the wet ingredients and mix until incorporated.
Fold in the diced apples.
Pour into a 6 cup sprayed bundt pan and bake 30-40 minutes or until the toothpick poked in the center comes out clean.
Cake should cool completely before eating.
Suggested Servings: You could substitute the apple with 1 cup of berries, fresh or frozen. Then it becomes a PB & J(am) Cake.

Hi Gail! I get my kodiak pancake and waffle mix from Costco. You can also get it online. If you are in Canada, you can get it online from Natura Market, You could also substitute other protein pancake mixes or even self rising flour. You may have to adjust your points though.
