Oat Groat & Wild Rice Pilaf (3 points)

6 servings (1/6 mixture)


Ingredients:

1/2 cup onion, chopped

1/2 cup celery, chopped

1/2 cup carrots, chopped

1 tsp minced garlic

1 cup uncooked wild rice

1 1/2 cups uncooked oat groats

1 tsp dried thyme

1 bay leaf

3 cups fat free chicken broth


Directions:

To a large sprayed saucepan, add the onions, celery, carrots and garlic. Cook until tender.

Add the wild rice, oat groats, spices and chicken broth.

Heat to a boil. Cover and cook over low heat for 30-40 minutes or until done.

Remove the bay leaf and serve.


Suggested Serving: Excellent side dish.
