Blackberry and Apple Preserves (1 point)

12 servings (1/2 cup)
Ingredients:
8 cups fresh blackberries, rinsed, divided
2 large apples, cored, grated
1/2 cup date powder
1 lemon, juice only
Directions:
Add 6 cups berries, grated apple, date powder and lemon juice to a large pot over high heat.
Once the mixture comes to a boil, lower the heat to low and allow the mixture to simmer for 45 minutes, stirring occasionally. The berries should burst and thicken.
Remove from heat and add the remaining 2 cups of berries and stir.
Ladle the hot preserves into clean 8 oz canning jars, leaving a 1/4" space at the top. Screw on the tops.
Place filled jars into a large pot, add enough water that the tops of the jars are covered by 1-2" water. Boil for 10 minutes.
Carefully remove the jars and let sit undisturbed for a couple of hours to cool. Test your seals by pressing down on the center of each lid. If the lid does not flex up and down, it is sealed.
If your jar does not seal, refridgerate and use within 3 weeks.
Suggested Serving: Use on toast, bagels, pancakes, waffles, muffins or in yogurt, oatmeal, fruit crisp or on it own.
