Hummus Salmon (4 points)

2 servings (1 fillet each)
Ingredients:
2 salmon fillets
30g hummus
20g whole grain breadcrumbs
12g walnuts, finely chopoed
10g grated parmesan cheese
1 tbsp fresh thyme, finely chopped
1 tbsp dijon mustard
Directions:
Preheat the oven to 375F and prepare a baking sheet by lining it with parchment paper.
Pat the salmon fillets dry, place on the prepared baking sheet and spread 15g hummus on top of each fillet. Set aside.
In a small bowl, mix the breadcrumbs, walnuts, parmesan cheese and thyme.
Add the dijon mustard to the crumb mixture and mix well.
Press 1/2 the mixture on top of each fillet.
Bake 18-20 minutes or until the salmon is cooked through.
