Za'atar Garlic Salmon Sheet Pan (2 points)

4 servings (1 fillet + 1/4 veggies/chickpeas each)


Ingredients:

12 oz little potatoes, halved and parboiled

6 oz broccoli florets, microwaved for 2 minutes

19 oz can chickpeas, drained and rinsed

6 tsp olive oil

2 tbsp minced garlic, divided

2 tsp za'atar seasoning, divided

1 tsp coriander, divided

4 salmon fillets


Directions:

Preheat the oven to 400F. Prepare a large baking sheet pan by lightly spraying it with oil. Set aside.

In a large bowl, add the potatoes, broccoli and chickpeas. Add the olive oil, 1 tbsp minced garlic, 1 tsp za'atar, 1/2 tsp coriander and toss. Transfer the mixture to the prepared baking sheet pan.

Pat the salmon fillets dry, lightly spray with oil, spread the remaining garlic, za'atar and coriander evenly on all 4 fillets. Add to the baking sheet.
