Baked Apple Pancakes (1 point)

2 servings (3 pancakes each)
Ingredients:
1 apple, cored and grated
5 tbsp unsweetened almond milk
1 egg
2 tbsp kodiak mix
1 tsp vanilla extract
1/2 tsp cinnamon
Directions:
Preheat the oven to 350F. Prepare 6 wells of a whoopie pie/muffin top pan by lightly spraying them with oil. Set aside.
In a medium bowl, add all the ingredients and mix until combined.
Divide the batter, evenly, into the prepared wells.
Bake for 10-15 minutes or until cooked through.
Suggested Serving: Serve with maple syrup and berries.
